Paul is the Head of Food Biosciences at Teagasc and a Principal Investigator with the APC Microbiome Ireland, Vistamilk and Food for Health Ireland centers in Ireland. He also co-ordinates MASTER, an EU project relating to microbiomes and the food chain (€10.9 mi budget) and is co-founder/CTO of SeqBiome (providing commercial microbiome analysis services). Paul is a microbiologist, with a particular focus on the microbiology of foods (especially fermented foods), the food chain and of humans (especially athletes) as well as bacteriocins. He is also the author of >350 peer-reviewed publications and was included in the Clarivate highly cited list for 2018-2020.
